Long Boy "Burgers"


For all you meatloaf lovers out there you gotta try this.  This recipe gives a great twist to the traditional "fork and knife" version.  It was great as is (4 out of 4 said they would eat it again) but in the future I might mix up a little bit and add some additional toppings like mushrooms, peppers, or even use a little less meat per sandwich and add a layer of mashed potatoes beneath the "burger".

Ingredients:
·         2 (6-inch) sub rolls, split in half lengthwise
·         1 cup cornflakes, crushed
·         1/2 small onion, minced
·         1/2 cup whole or lowfat milk
·         6 tablespoons ketchup, separated
·         1 tablespoon Worcestershire sauce
·         1 teaspoon minced fresh thyme
·         1/2 teaspoon garlic powder
·         1 large egg, lightly beaten
·         Salt and pepper
·         1 lb 90% lean ground beef
·         1 1/2 cups shredded cheddar cheese

Directions:
1.   Adjust the oven rack to upper-middle position and heat oven to 400 degrees.
2.   Combine cornflakes, onion, milk, 4 tablespoons ketchup, Worcestershire sauce, thyme, garlic powder, egg, 1/2 teaspoon salt, and 1 teaspoon pepper in large bowl. Add meat and knead gently until well combined.
3.   Line a baking pan with aluminum foil and place rolls on pan.  Top rolls evenly with meat mixture, spreading meat to edges of rolls. Brush top of meat mixture evenly with remaining ketchup and bake until meat registers 160 degrees, 10-15 minutes. Top burgers with cheese and continue to bake until cheese melts, 3-4 minutes.

  1. Ohhh, I would definitely partake in trying those changes. Mashed potatoes for sure!
