Mexican Macaroni & Cheese

Okay so now that you know a little more what cooking is like in the Zimmer family I wanted to pass along a recipe that is a huge hit in our family.  It is SIMPLE and delicious.  I can't take credit for the recipe though.  The Appeldorn's have a true knack for finding the easy recipes that go a long way in both portion and taste.  This recipe would have never hit my radar because of one of the main ingredients: macaroni and cheese.  I am so thankful they had us over for supper one night so we could try this meal.  It is now a regular in our home as Andrew can easily make it without asking me ANYTHING and Grayson likes it too.

MEXICAN MACARONI & CHEESE

Ingredients
1 lb Hamburger
1 packet taco seasoning
2 boxes of macaroni & cheese
2 cans corn
1 jar salsa

Instructions
1. Brown hamburger and add taco seasoning.
2. Prepare macaroni & cheese as directed on package.
3. Once hamburger and macaroni & cheese are prepared mix them together and add corn.
4. To the hamburger, macaroni, and corn mixture add salsa to your liking (we use a whole jar of homemade salsa so how much you like may differ on brand and heat).

*This recipe makes quite a bit of food, expect leftovers.  You can half the recipe which would be more manageable for a smaller family but we never know what to do with the remaining hamburger plus we don't mind leftovers, it is still yummy.
