Roasted Red Pepper Dip

Yum!!!!!!!!!  I made this dip for the Thanksgiving holiday and it was a huge hit.  If you are looking for a mix it and forget it appetizer this dip is for you.

ROASTED RED PEPPER DIP


 
Ingredients:
  • 7 oz jar of Roasted Red Peppers
  • 3/4 lb or approx 1 1/2 cups Monterrey Jack cheese
  • 8 oz pkg of cream cheese
  • 1 cup mayo (or sour cream)
  • 1 tbsp minced onion
  • 1 clove garlic, minced
  • 2 tbsp Dijon-style mustard
    • Optional: 1 can corn and/or 1 can black beans
  • Tortilla chips
Directions:
  1. Preheat oven to 350 degrees.
  2. In a small baking dish mix all ingredients together.
  3. Bake in preheated oven for 20 min.  Serve warm with tortilla chips.
  4. Another option is to mix and serve in a small crockpot.
*I made the version of this dip that went straight into the crockpot and had the main ingredients plus corn (no beans).
